Twice a year, in spring and autumn, fertilizers such as rapeseed oil cake and
seed oil cake are applied
on the soil of the whole 6 hectares of our tea farm.
It’s actually quite a hard work because most part of the farm is on the steep mountainside,
and any trucks can’t go in there.
But it’s a necessary work to be done in order to make good soil to make good tea.
Since it’s an organic farm, lots of worms,
and beneficial insects like mantises, ladybugs, and spiders live there,
and we are glad they help us get rid of pest insects.
The farm is good for living things like them,
but unfortunately it is also good for wild animals like deer and hogs.
They frequently come ruin the farm, and that’s our headache for now.
Unjitawara Town is a little cooler than any other places in Kyoto prefecture,
so our manufacturer starts picking tea leaves a little late, around in the middle of May,
while other places start in early May.
Until the season of the second tea-crop (May-July) ends,
the factory keeps producing tea at full capacity.
It feels like every year is the first time to produce tea
because the quality of tea easily varies depending on the weather conditions of the year.
< A Gift for Crown Prince and Princess >
In May of 1999, the new tea leaves of the year were picked in response to a request from the hotel
where Crown Prince and Princess would stay,
who came for an opening ceremony of ‘Shimanami Kaido’ Express Way.
The hotel wanted Crown Couple to enjoy the organic new tea leaves at the hotel.
It was our honor to hear they really enjoyed our tea leaves cooked deep-fried (Tempura).
As it gets warmer in spring, the soil starts changing, and new buts start growing,
and at the same time,
weed begins to grow.
Especially after the second-crop season ends,
weeding is what we need to do every day.
Weeding is all done by hand work, so it needs a lot more effort than non-organic farms.
<Production of San-nen Bancha (Three-Year-Aged Bancha)>
San-nen Bancha is made from tea leaves picked mainly in spring or autumn.
The leaves are older than three years, and the hard,
old tea leaves which are stored over the summer get steamed
and dried (by sun-drying/drying machine),and then matured in the storehouse.
Old leaves contain less caffeine, and they taste milder by getting matured.
We pack roasted San-nen Bancha as soon as we receive orders from our customers.
In order to get a lot of people to know our tea products, we display them at various exhibitions.
By taking part in these exhibitions, we can get customers’ feedback directly,
and that’s a great thing in order to improve our products.
<What We Do for Improving Safety>
Our manufacturer has the integrated system of production,which grows tea
at their own approx.
6 hectares of tea farms, and manufactures tea products at their own factory.
They introduced foreign body removing machines and metal detectors to produce safer products. Furthermore, they built up the product traceability system by keeping their production records,
and also they are trying to produce safer products by conducting frequent tests
on residual pesticides and radiation.
