What is DASHI ?
Dashi, the traditional Japanese stock, is a key part in Japanese cuisine because of its flavor enhancing action.

Dashi is an extract of certain ingredients such as fish, meats, vegetables, and seaweed, and it is often used to add flavor to various Japanese dishes.
About Dashi Syoyu
This is a Dashi soy sauce which is packed full of dried bonito flakes, dried mackerel flakes, raw sugar from Kikaijima Island, Mikawa mirin, fish soy sauce from Noto Peninsula.
This soy sauce is "naturally brewed" and slowly aged over many years.
"Natural brewing" means that the soy sauce is brewed slowly and "naturally", letting the seasonal temperature and climate be felt.
The soy sauce is aged in wooden vats made of Yoshino cedar.
Soy sauce matured in a wooden vat loses the harshness of salt and becomes mellow,
with a deeper flavor and a beautiful clear color.
It uses a lot of bonito flakes, so it is perfect for those who like bonito flavor.No food additives are used, so it is safe to use for small children.
